The all riesling wines are sweet myth.
Have you been ignoring rieslings because you don't care for sweet wines? If so you are missing out on one of the world's truly noble grapes. A well made riesling has enough acidity to keep the sweetness in balance. The best never taste cloying. But there are many producers crafting dry rieslings that are among the greatest wines made anywhere.
The sweetnes levels of wines are determined by the winemaker. During fermentation yeast consume the sugar and convert it to alcohol and carbon dioxide. The winemaker can let the yeast continue until there is little or no sugar left which produces a dry wine or they can stop the fermentation leaving some residual sugar. There are also methods where wines can be sweetened after fermentation. Many rieslings on the market have some residual sugar and can range from just off dry to quite sweet. However, there are plenty of examples of dry rieslings produced in many regions. Look for German rieslings labeled "Trocken" which means dry. Rieslings from Alsace are usually dry as are many from Australia.
With flavors of peach, apple, citrus, pine, minerals and sometimes a touch of petrol, rieslings are very complex and long lived. So take a chance, give dry riesling a try.
